FOR THE FILLET STEAK:
Coarse Black Pepper
Mustard Seeds
Coarse Salt
Olive Pride Olive Oil
FOR THE SAUCE:
Clover Fresh Cream
Brandy
Beef Stock
Coarse Black Pepper
Clover Gouda Cheese – Grated
FOR THE SEASONING:
Mix together equal amounts of coarse black pepper,yellow mustard seeds and coarse salt.
Cover the fillet in Olive Pride olive oil and then coat it in the mustard seed mix, pressing it in firmly so that not too much falls off while cooking.
Grill to taste. And let the meat rest.
FOR THE SAUCE:
Reduce 350 ml of Clover fresh cream in a frying pan and allow it to thicken.
Add one tot (or 35.5ml) of KWV brandy, half a teaspoon of beef stock and a sprinkling of coarse black pepper.
Once that was all done add in the grated Clover cheddar cheese (about 150grams) stirring constantly until the grated Clover Cheddar as melted into the cream sauce.
Plate up your fillet and serve it with your delicious cheese sauce on the side.
