500g macaroni, cooked
50g butter
50g flour
500ml Clover Care milk
1 cup mozzarella, grated
1 teaspoon nutmeg, grated
Salt and pepper
250g streaky bacon, chopped and fried
2 red onions, caramelised
500ml cheese mixture, grated (cheddar, mozzarella, feta )
3 garlic cloves, minced
1 lemon, zested
250ml bread crumbs
1 teaspoon smoked paprika
1 teaspoon cayenne pepper
1 teaspoon smoked chili flakes
1 tablespoon mustard
Handful chopped parsley
Pre-heat oven to 200°C.
To make the white sauce, melt and combine the butter and flour in a saucepan until brown and toasted. Slowly stream in Clover Care milk while whisking continuously to avoid lumps forming.
Gently bring to a boil while stirring, then add the mozzarella, nutmeg and seasoning. Mix through cooked macaroni and place in an oven-safe dish.
For the crust, simply add all the ingredients to a bowl and mix through well. Cover the macaroni evenly with the crust and bake for 20-30 minutes until golden brown and bubbling.
For an extra crunch, turn the grill on for the last 5 minutes. Don’t let it burn!
Allow to cool for 5 minutes before serving.
