250 g bacon bits
½ cup leeks
2 garlic cloves
3 cups flour
1 teaspoon baking powder
1 teaspoon cayenne pepper
10 g chives, chopped
¼ – ½ cup Clover Amasi
1 egg, beaten
1 tablespoon canola oil
½ cup cream style sweet corn
½ cup Clover mature cheddar, grated
salt & pepper
In a sauce pan cook the bacon bits until golden and crispy.
Add the leeks and the garlic until cooked and fragrant and set aside to cool.
In a large mixing bowl combine the flour, baking powder, cayenne pepper and chives.
Season with salt and pepper.
Stir in a ¼ cup of Clover Amasi, egg and oil until just moistened
Mix in the corn, cheese and bacon mixture.
Heat and grease a frying pan or griddle pan and pour a ¼ cup of the batter onto the griddle.
Cook until golden brown 3-4 minutes per side.
Repeat with the remaining batter.
Serve with crispy bacon and maple syrup.
