1/2 onion
1 Clove garlic
1 tin Whole peeled tomatoes
200g Cherry tomatoes
100g Olive Pride pitted green olives in brine
50g basil
100g Clover feta cheese
250g penne
30ml Olive Pride Blend of Seed Oils and Olive Oils
Salt and pepper to taste.
Heat oven to 200°C
Roast cherry tomatoes on a high heat until cooked.
Chop onion and garlic.
Fry in Olive Pride Blend.
Add tomatoes and simmer until thickened.
Season and add Olive Pride Pitted Green Olives and basil.
Cook penne in boiling salted water until al dente.
Mix cooked penne with sauce and oven roasted tomatoes, and place in an ovenproof dish.
Top with Clover Feta and bake at 200 degrees Celsius until golden (10 minutes).
