Ciabatta French Toast

Serves 2 Preparation time: 10 minutes Cooking time: 10 minutes   Ciabatta is great bread for French Toast as it holds its shape much better than regular bread and it becomes deliciously crunchy!

INGREDIENTS

For the French toast:

  • 125 ml (1/2 cup) Clover Fresh Full Cream Milk
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla essence
  • 1 tablespoon castor sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 4 thick slices ciabatta bread
  • Clover Mooi River Salted Butter, for frying

 

To serve:

  • Seasonal fresh berries of your choice

Method

For the French toast:

  1. Whisk the milk, eggs, vanilla essence, cinnamon and baking powder together until well combined.
  2. Soak four ciabatta slices in the egg mixture for about 10 seconds each until the liquid is absorbed (turn if needed).
  3. In a large frying pan, melt a generous dollop of butter (at least 1 headed tablespoon) and heat the pan until the butter is completely melted and starts frothing.
  4. Place the ciabatta slices in the hot pan and fry on both sides until golden and toasted – adding more butter if needed and turning down the heat if the butter starts to brown too much.

 

To serve:

  1. Once the slices are cooked, serve immediately with fresh berries.

 

TIPS:

  • Dust the slices with some icing sugar for a sweeter version and smear with Nutella for an indulgent version.
  • You can serve a large crowd by keeping the cooked ciabatta slices warm in a low oven.
