Deliciously fruity pancakes for any time. As seen on Expresso Morning Show or Afternoon Express, SABC3.

1 cup plain ﬂour
1 teaspoon baking powder
tiny pinch of salt
2 large eggs
½ teaspoon vanilla extract
butter, for frying
For the ﬁlling:
Clover Strawberry SnackPack yoghurt
chopped whole blueberries
Combine the ﬂour, baking powder and salt in a mixing bowl. Add the eggs, milk and vanilla. Use an electric beater to mix until smooth and just combined.
Melt a little butter in a frying pan. Add a scoop of pancake batter and swirl the pan to make a thin pancake. Cook the pancake until it bubbles and is set on top, then ﬂip over and cook until golden brown on both sides.
Spread some strawberry SnackPack yoghurt over the pancake. Topped with a few slices of banana, chopped strawberries and a few blueberries. Roll the pancake up and serve immediately.
