50g butter
2 large Leeks, sliced
2 cloves garlic, chopped
2 tablespoons flour
3 cups Clover Care milk
500g hake fillets, cubed
200g corn kernels
2 small sweet potatoes, cut into cubes
Salt and pepper for seasoning
Handful fresh chives, chopped
In a large saucepan, melt the butter and fry the leeks, garlic and sweet potato, until the sweet potatoes start to soften a little.
Sprinkle over the flour and cook for 1 – 2 minutes until thick.
Slowly start pouring the milk and stir until the mixture thickens and all the milk is used.
Season with salt and pepper.
Add in the cubed fish along with the corn kernels.
Allow to cook until the fish is cooked through and sweet potatoes are tender.
Season with chopped chives.
Serve with crusty bread.
