10 – 15 prawns, deveined and shell removed
500g mussels
150g exotic mushrooms, sliced
1 cup Clover Care milk
½ cup Clover fresh cream
1/3 cup cream cheese
1 tablespoon Olive Pride extra virgin olive oil
2 garlic cloves
350g zucchini noodles
Handful parsley, chopped
Salt and pepper
Bring a saucepan to a medium-high heat, add olive oil and mushroom, and sauté for 3 – 4 minutes.
Add the Clover Care milk, cream, garlic and cream cheese, and mix well.
Allow to simmer for 10 – 15 minutes, remove from the heat. Using a stick blender to blend the mixture until smooth.
Return the sauce to the stove and bring to the boil. Add the prawns and mussels and allow to simmer for 5 – 7 minutes. Do not overcook the seafood or it will be tough.
Stir in the zucchini noodles and parsley.
Season with salt and pepper and serve.
