2 large potatoes, parboiled
½ onion, finely chopped and caramelised
½ cup Clover mature cheddar, plus extra for topping
¼ cup Clover feta cheese, crumbled
2 tablespoons chives, finely chopped
Salt and pepper
Clover sour cream for serving
Preheat the oven to 180°C.
Cut the potatoes in half and scoop the flesh into a mixing bowl.
Mash the potatoes, add the chopped chives, feta, cheddar, caramelized onion and season well with salt and pepper.
Scoop the potato mixture back into the potato skins and top with extra cheddar cheese.
Place the potatoes onto a lined baking sheet and place into the oven for 25 – 30 minutes, until golden brown.
Serve the baked potatoes with a good dollop of Clover sour cream and chopped chives.
