Clover Classic Coconut Lamb Curry

INGREDIENTS

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Lamb stew pieces (or lamb knuckles)
  • 2 tablespoons garam masala
  • 2 tablespoons curry powder
  • 1 cinnamon stick
  • 2 tablespoons tomato paste
  • 1 tin chopped tomatoes
  • 1 tablespoon brown sugar
  • 1 cup desiccated coconut
  • ½ cup Clover Classic yoghurt
  • Fresh coriander for garnishing

Method

  1. Sauté the onion and garlic in a little oil.
  2. Add the lamb pieces and spices and allow to brown a little.
  3. Add in the tomato paste, chopped tomatoes and sugar, along with a cup of water.
  4. Season with salt and pepper and allow to simmer until the lamb is tender.
  5. Stir in the desiccated coconut and the Clover Classic.
  6. Season with more salt if necessary.
  7. Serve with basmati rice, a dollop of Clover Classic and fresh coriander.
