Clover Good Hope Soy Butternut Soup

Method

1. In a large pot over medium heat, heat the olive oil and sauté the garlic, onions and celery. Stir often until soft and fragrant, for 5 minutes.
2. Add the carrots, butternut squash and vegetable stock.
3. Bring to a boil, then reduce the heat to low and simmer until all of the vegetables are tender – about 30 to 40 minutes.
4. In batches, transfer the soup to a blender and process until smooth.
5. Return the soup to the pot.
6. Stir in the Soy Milk, salt and pepper and cook until desired temperature and consistency, adding more Soy as desired.
7. Serve and enjoy.
