Croissant Bread and Butter Pudding

Serves: 6 - 8 Preparation time: 10 minutes Baking time: 45 minutes   A quick and easy sweet breakfast (or even dessert) that everybody loves.

INGREDIENTS

  • Clover Farmstyle Salted Butter for greasing
  • 8 – 10 plain croissants, sliced lengthways
  • 1 x 80/100 g slab dark chocolate, chopped
  • 6 large eggs
  • 60 ml (1/8 cup) Clover Classic Custard, plus extra to serve
  • 300 ml Clover Full Cream Milk
  • 300 ml Clover Fresh Cream
  • 130 g (2/3 cup) castor sugar
  • 5 ml (1 teaspoon) vanilla essence

Method

  1. Preheat oven to 180°C.
  2. Grease a large baking tray well with butter.
  3. Place the croissants on the tray and sprinkle over the chocolate, opening the croissants to sprinkle some chocolate inside too.
  4. In a large mixing bowl whisk the remaining ingredients together until frothy and pour over the croissants, making sure to fill all the gaps in between.
  5. Bake on the lowest rack in the oven for 30 – 45 min or until a knife or cake tester inserted in the centre comes out clean.
  6. Remove from the oven and allow to stand for 10 min to set before serving.
  7. Serve with warm or room temperature custard.

 

TIPS:

  • Make this recipe even more indulgent by spreading Nutella on the inside of the croissants and using hazelnut dark chocolate or extra hazelnuts to scatter over before baking.
  • Add 2 tablespoons cocoa powder to the egg mix for a more chocolaty version.
