Serves: 6 - 8
1 small or ½ medium cucumber
2 celery stalks
1 medium or 2 baby leeks, well washed and green ends removed
±12 – 16 strawberries, washed and hulled
2 – 3 kiwi fruits, peeled
200 g Clover feta Cheese, finely diced
Olive Pride Extra Virgin Olive Oil
Cut the cucumber, celery stalks and leeks into very fine strips (by hand or with a special vegetable cutter) and place into iced water to curl and crisp.
Drain and place into a salad bowl.
Slice the strawberries and kiwis decoratively over the vegetable strips.
Add the Feta cheese.
Toss lightly and sprinkle with the balsamic vinegar, olive oil and pepper as preferred.
