Filling
2 tbsp (30ml) Clover Springbok Butter
4 leeks, sliced thinly
½ tsp (2ml) garlic, crushed
3 slices country ham, chopped
2 cups (450g) mashed potato
1/ 3 cup (50g) cake flour
¼ cup (35g) Clover Tusser’s Cheese, grated
1 egg yolk
salt and black pepper
Coating
½ cup (70g) cake flour
1 egg, beaten
1½ cups (90g) fresh bread crumbs
oil for frying
Heat the butter in a pan over a moderate heat and cook the leeks and garlic for 3 minutes, until softened.
Transfer to a mixing bowl and allow to cool.
Stir in the ham, potato, flour, cheese and egg yolk.
Season well with salt and pepper and combine.
Shape into patties and chill for 30 minutes.
Coating
Place the flour, egg, and bread crumbs into three separate bowls.
Dip each patty separately into the flour, shake of the excess and then dip into the egg to coat and finally into the fresh bread crumbs.
Chill for 20 minutes before pan frying over a moderate heat for 2–3 minutes per side, until crispy and golden.
Serve with salad.
